Red Sauce Joint Peppers and Eggs Hero

Ingredients for serving

  • 6 g Garlic, raw 0.67 x cloves (9g)
  • 25 g whole-wheat hero rolls 1 x 1 loaf (25g)
  • 22 g Egg, white, raw, fresh 0.67 x large (33g)
  • 33.3 g Egg, whole, raw, fresh 0.67 x large (50g)
  • 38.3 g Onions, raw 0.33 x cup, sliced (115g)
  • 50 g Bell pepper (green/yellow/red) 0.5 x unit (100g)
  • 2.2 g Oil, olive, salad or cooking 0.17 x tablespoon (13g)
  • 37.3 g Shelton's Turkey Italian Sausage.. 0.67 x serving (56g)

Instructions

  • Preheat the grill to a suitable temperature. Place the rolls (cut sides up) on it and toast them for a couple of minutes. Keep the rolls aside.
  • Heat a little oil in a pan over medium heat. Cook sausage in it until it is slightly browned. Remove the sausage from the pan and keep it aside.
  • Add a little oil in the pan. Add onions and bell peppers and saute until they become tender. Now add the garlic and the sausage.
  • Reduce the heat and continue to cook for a few more minutes.
  • In a bowl, mix the egg whites and the eggs and pour the mixture into the peppers and onions.
  • Use a spatula to gently scramble the eggs into the peppers and onions.
  • Stop cooking the eggs when they start to glisten and are moist. Transfer 2/3 cup of this mixture into each roll and serve hot.
