Instructions

In a deep bowl, add egg yolks and 1 tsp of lemon juice or vinegar.

Mix with a handmixer until it's smooth.

With handmixer running, slowly add olive oil until you form an emulsion. If you pour the oil too quickly, it will separate.

Continue to add the oil until the mixture thickens.

Add the remaining lemon juice and mix to combine.

Add salt and pepper to taste.
