Ingredients for serving

  • 10.8 g Oil, olive, salad or cooking 0.05 x cup (216g)
  • 1.7 g Egg, yolk, raw, fresh 0.1 x large (17g)
  • 0.2 g Salt, table 0.03 x tsp (6g)
  • 0.3 g Lemon juice, raw 0.05 x wedge yields (5.9g)
  • 0.1 g Spices, pepper, black 0.05 x tsp (2.1g)

Instructions

  • In a deep bowl, add egg yolks and 1 tsp of lemon juice or vinegar.
  • Mix with a handmixer until it's smooth.
  • With handmixer running, slowly add olive oil until you form an emulsion. If you pour the oil too quickly, it will separate.
  • Continue to add the oil until the mixture thickens.
  • Add the remaining lemon juice and mix to combine.
  • Add salt and pepper to taste.
