Grilled Corn Fritters with Jarlsberg Pimento Cheese

Ingredients for serving

  • 0.2 g Salt, table 0.5 x dash (0.4g)
  • 0.9 g Spices, pepper, red or cayenne 0.5 x tsp (1.8g)
  • 27.5 g Egg white beaten 0.5 x piece (55g)
  • 22.5 g pepperoncini brine 1.5 x 1 tbsp (15g)
  • 22.5 g Cheese, cream, low fat 1.5 x tbsp (15g)
  • 27 g Lemons, raw, with peel 0.25 x fruit without seeds (108g)
  • 0.5 g Chives, raw 0.5 x tsp chopped (1g)
  • 62 g All-Purpose Flour 0.5 x cup (124g)
  • 28 g Mayonnaise, low sodium, low .. 2 x tbsp (14g)
  • 17.5 g Cheese, pasteurized process, .. 0.13 x cup, diced (140g)
  • 80 g Corn (ear) 2 x 1 ear (40g)
  • 90 g Jarlsberg reduced cheese 0.75 x 1 cup (120g)
  • 7.5 g Vegetable oil 0.5 x tbsp (15.0g)
  • 56 g Water 0.25 x 1 cup (224g)
  • 0.6 g Spices, onion powder 0.25 x tsp (2.4g)

Instructions

  • Preheat the grill to medium heat.
  • Rub the corn with a little olive oil and grill it for at least 15 minutes or until it is slightly charred.
  • Remove the charred corn from the grill and keep it aside to cool.
  • In a large bowl, combine Pepperoncini brine, pimentos cheese, mayonnaise cheese, cream cheese, red pepper powder and Jarlsberg cheese.
  • Season the mixture with salt and pepper. Wrap the bowl using a plastic sheet and keep it in the fridge for at least 30 minutes.
  • Now cut the corn off the cobs.
  • In a bowl, combine salt, baking powder, onion powder and all-purpose flour.
  • Add water, lemon juice and egg into the mixture. Beat the mixture until you get a batter.
  • Fold in corn kernels.
  • Preheat a skillet over medium heat. Add vegetable oil in it.
  • When the oil is hot, add a cup of batter. Spread it evenly in the skillet.
  • Cook both the sides of fritters evenly or until they turn golden brown.
  • Transfer the cooked fritter on paper towels to drain excess oil.
  • Allow fritter to cool down. Add pimento cheese and sprinkle chopped chives just before serving.
