Crispy Sweet Potato Nuggets

Ingredients for serving

  • 100 g Sweet potato, raw 1 x small, large, medium (3.5 oz)
  • 50 g Egg, whole, raw, fresh 1 x large (1.8 oz)
  • 28.4 g All-Purpose Flour 1 x ounce (oz)
  • 28.4 g Bread crumbs, dry, grated, plain 1 x ounce (oz)
  • 0.4 g Salt, table 1 x dash (0 oz)
  • 2.3 g Spices, paprika 1 x tsp (0.1 oz)
  • 14 g Oil, industrial, canola, high .. 1 x tablespoon (0.5 oz)

Instructions

  • Boil the sweet potato in water for 6-7 minutes until soft and tender.
  • Peel and cut the sweet potatoes into big cubes or as you desire.
  • Combine flour and salt in a bowl.
  • Mix bread crumbs and paprika in another bowl.
  • Beat the eggs in the third bowl.
  • Roll sweet Potato cubes in plain flour, coat it well, then dip into the eggs mixture and then roll into the bread crumbs mixture. Keep aside.
  • Heat oil in a skillet for deep frying.
  • Fry these potato nuggets for 2 to 3 minutes or golden brown.
  • Serve hot with Greek yogrut dip.
