Cranberry Orange Biscotti

Ingredients for serving

  • 11.4 g Wheat flour, whole-grain, soft ..
  • 0.1 g Leavening agents, baking powder,.. 0.05 x tsp (2.5g)
  • 0.1 g Salt, table 0.01 x tsp (6g)
  • 2.3 g Egg, whole, raw, fresh 0.05 x large (50g)
  • 6.8 g Sugars, granulated 0.03 x cup (200g)
  • 3 g Egg, white, raw, fresh 0.09 x large (33g)
  • 0.2 g Vanilla extract 0.05 x tsp (4.2g)
  • 1 g Oil, vegetable, Natreon canola, .. 0.07 x tbsp (14g)
  • 0.7 g Orange Zest 0.05 x piece (15g)
  • 0.9 g Cranberries, dried, sweetened 0.02 x cup (40g)

Instructions

  • Set the oven temperature to 350 degree F
  • Take a medium bowl and combine baking powder, salt and flour.
  • Then take a large bowl and beat vanilla, oil, egg whites, egg and sugar
  • Add the above flour mixture to the egg mixture and sugar. Stir well and then mix orange zest and dried cranberries.
  • Transfer the dough on to a flat surface. Then divide it into two halves and form 2 logs of 8 inches each.
  • Take a baking sheet and place the dough logs over it. Then bake them until they become slightly firm
  • Remove the dough from oven and allow it to cool for at least 15 minutes.
  • In the meantime reduce the oven temperature to 300 degrees F
  • Once the dough logs are cooled, take a knife and cut the dough diagonally into slices of ½ inches.
  • Place all the slices on the baking tray and continue baking them for at least 10 minutes on either side.
  • Remove the slices from oven and allow them to cool over a wire rack.
