Baked Italian Rice Balls

Ingredients for serving

  • 80 g cooked brown rice 0.5 x cup (5.6 oz)
  • 14.2 g Cheese, mozzarella, nonfat 0.5 x ounce (oz)
  • 2.5 g Parmesan cheese topping, fat .. 0.5 x tablespoon (0.2 oz)
  • 44 g Egg, whole, raw, fresh 1 x medium (1.5 oz)
  • 7 g Peppers, jalapeno, raw 0.5 x pepper (0.5 oz)
  • 3.6 g chopped Garlic 0.5 x tbsp (0.3 oz)
  • 1.4 g Spices, chili powder 0.5 x tsp (0.1 oz)
  • 14.2 g Bread crumbs, dry, grated, plain 0.5 x oz (1 oz)
  • 3 g Salt, table 0.5 x tsp (0.2 oz)
  • 1.2 g Spices, pepper, black 0.5 x tsp, ground (0.1 oz)
  • 6.8 g Oil, olive, salad or cooking 0.5 x tablespoon (0.5 oz)
  • 1.3 g Basil, fresh 0.5 x leaves (0.1 oz)
  • 0.3 g Spices, parsley, dried 0.5 x tsp (0 oz)

Instructions

  • Use cooked brown rice for the recipe or cook the brown rice according to the package instruction, drain and set aside to cool.
  • Combine one egg, basil leaves, parsley, jalapeƱo, garlic, chili powder, and cheese in a large bowl. Add cooked rice and mix well.
  • Preheat the oven to 400 degree F (200 degree C). Grease a baking dish with olive oil.
  • For the coating, whisk 1 egg and 1 teaspoon olive oil together in a bowl.
  • Mix salt and black pepper with bread crumbs and spread on a plate.
  • Prepare the small balls (2 inch diameter) with rice mixture. Dip into the egg mixture, and then roll in the bread crumbs to coat.
  • Place the prepared rice balls in the baking dish and bake for 15 minutes until golden brown.
  • Remove the baking dish and turn over the rice balls, bake again on the other side for 15 minutes.
  • Serve hot.
