Turkey And Brown Rice Casserole

Ingredients for serving

  • 28 g Turkey, whole, enhanced, meat .. 1 x oz (28.35g)
  • 70 g Mushrooms, white, raw 1 x cup, pieces or slices (70g)
  • 160 g cooked brown rice 1 x cup (160g)
  • 115 g Onions, raw 1 x cup, sliced (115g)
  • 1 g Oil, olive, salad or cooking
  • 2 g Spices, thyme, dried 1 x tbsp, leaves (2.7g)
  • 28 g Cheese, parmesan, dry grated, .. 1 x oz (28.35g)
  • 298 g CAMPBELL'S Low Sodium Soups, .. 1 x serving 1 container (298g)
  • 0 g Salt, table 1 x dash (0.4g)
  • 6 g Spices, pepper, black 1 x tbsp, ground (6.9g)

Instructions

  • Preheat the oven to 375 degree Fahrenheit.
  • Heat the large non stick pan and saute onion with olive oil over medium heat.
  • Add chopped mushroom, thyme, salt and black pepper and saute 1-2 minutes.
  • Add diced turkey and cooked brown rice into pan and mix to combine all the ingredients well. Remove from the heat.
  • Stir in the chicken stock to the brown rice mixture.
  • Grease a casserole dish with olive oil, transfer the brown rice mixture to the casserole dish, distribute and press down evenly.
  • Spread low fat cheese on the top and bake for 30 minutes or until slightly brown in color.
  • Remove from the oven and serve hot.
