Instructions

Preheat the oven to 375 degree Fahrenheit.

Heat the large non stick pan and saute onion with olive oil over medium heat.

Add chopped mushroom, thyme, salt and black pepper and saute 1-2 minutes.

Add diced turkey and cooked brown rice into pan and mix to combine all the ingredients well. Remove from the heat.

Stir in the chicken stock to the brown rice mixture.

Grease a casserole dish with olive oil, transfer the brown rice mixture to the casserole dish, distribute and press down evenly.

Spread low fat cheese on the top and bake for 30 minutes or until slightly brown in color.

Remove from the oven and serve hot.
