Thai Green Prawn Curry

Ingredients for serving

  • 100 g Prawns, raw, uncooked cleaned .. 1 x pack(100), 12 prawns (100g)
  • 75 g Coconut milk 0.5 x Can (150g)
  • 14 g Thai green curry paste 1 x tablespoon (14g)
  • 20 g Coriander (cilantro) leaves, raw 1 x sprigs (20g)
  • 4.2 g Sugars, granulated 1 x tsp (4.2g)
  • 30 g Baby Spinach 1 x cup (30g)
  • 15.3 g Lemon juice, raw 0.5 x fl oz (30.5g)

Instructions

  • Wash, devein and pat the prawns dry.
  • Combine in a bowl: curry paste, sugar, cilantro and 2 tablespoon of coconut milk and blend to a smooth paste.
  • Heat a non stick pan over medium heat and cook this paste for 1-2 minutes while stirring frequently.
  • Add remaining coconut milk and stir to mix.
  • Bring to a boil, then add prawns and baby spinach and cook for 5 minutes.
  • Add lime juice, stir and remove from the heat.
  • Serve hot.
