Instructions

Wash, devein and pat the prawns dry.

Combine in a bowl: curry paste, sugar, cilantro and 2 tablespoon of coconut milk and blend to a smooth paste.

Heat a non stick pan over medium heat and cook this paste for 1-2 minutes while stirring frequently.

Add remaining coconut milk and stir to mix.

Bring to a boil, then add prawns and baby spinach and cook for 5 minutes.

Add lime juice, stir and remove from the heat.

Serve hot.
