Tasty Turkey And Brown Rice Skillet

Ingredients for serving

  • 90 g Turkey breast, sliced, .. 6 x slice (15g)
  • 92.5 g Rice, brown, long-grain, raw 0.5 x cup (185g)
  • 91 g Broccoli, raw 1 x cup chopped (91g)
  • 75 g Corn, sweet, yellow, canned, .. 0.5 x cup drained, rinsed (150g)
  • 80 g Bell pepper (green/yellow/red) 1 x medium (80g)
  • 5.3 g Spices, pepper, red or cayenne 1 x tbsp (5.3g)
  • 1.8 g Spices, oregano, dried 1 x tsp, ground (1.8g)
  • 4.5 g Oil, olive, salad or cooking 1 x tsp (4.5g)
  • 0.4 g Salt, table 1 x dash (0.4g)
  • 448 g Water 2 x 1 cup (224g)

Instructions

  • Wash and soak brown rice in one cup of water for 30 minutes before cooking. Drain and set aside.
  • Take a large non stick skillet and heat oil. Add turkey strips and cook until lightly brown, remove from the skillet and set aside.
  • In the same skillet add rice, remaining water, cayenne pepper and salt. Stir and bring to a boil. Cover and let it simmer for 15 minutes over low heat.
  • Stir in broccoli, corn, bell pepper, oregano and turkey. Return to a boil and reduce heat to simmer for 5-6 minutes.
  • When the rice and vegetables are cooked through remove from the heat and serve hot.
