Spinach Salad with Chicken and Noodles

Ingredients for serving

  • 62.5 g Noodles, chinese, cellophane or ..
  • 6.8 g Oil, sunflower, linoleic, .. 0.5 x tbsp (13.6g)
  • 125 g Chicken breast, low fat 1.25 x fillet (100g)
  • 18 g Soy sauce made from soy (tamari) 1 x tbsp (18g)
  • 50.3 g Limes, raw 0.75 x fruit (2" dia) (67g)
  • 0.8 g Garlic, raw 0.25 x clove (3g)
  • 75.3 g Cucumber, with peel, raw 0.25 x cucumber (8-1/4") (301g)
  • 85 g Spinach, raw 0.25 x bunch (340g)
  • 17.5 g Sauce, sweet chili, hot

Instructions

  • Cook the noodles according to instructions on the pack. When done, rinse the noodles with cold water.
  • Slice the chicken. Heat the oil in a frying pan and bake the chicken 5-6 minutes until done. Add salt and pepper according to taste.
  • Dressing: Squeeze the lemons. Mix the lemon juice with the soy sauce and chili sauce in bowl. Squeeze the garlic above it.
  • Slice the cucumber in ribbons and mix it with the spinach.
  • Mix the vegetables, noodles and dressing. Serve the chicken on top.
