Instructions
Set the oven temperature to 350 degrees Fahrenheit / 175 degrees Celsius.
In a large bowl, combine crushed tortilla chips, salt, black pepper, and garlic powder, cumin and chipotle salsa. Set the mixture aside for at least 10 minutes.
In another bowl, combine ground beef, eggs and cheddar cheese.
Coat an aluminum foil with cooking spray.
Form 9*5” loafs out of the beef mixture. Place the meatloaf in a pan and bake for 50 minutes at the set temperature.
In another bowl, combine ketchup, salt, 1 tbsp salsa and lime juice. Pour this mixture over meatloaf.
Continue to bake at the set temperature for another 20 minutes.
Set the meatloaf aside for 5 minutes before serving.
