Smoked Salmon Tartines with Fried Capers

Ingredients for serving

  • 3.8 g Vegetable oil 0.25 x tbsp (15.0g)
  • 0.4 g Chives, raw 0.13 x tbsp chopped (3g)
  • 0.1 g Salt, table 0.13 x dash (0.4g)
  • 0 g Spices, pepper, black 0.13 x dash (0.1g)
  • 6.3 g Onion, red, raw 0.06 x unit (100g)
  • 0.6 g Oil, olive, salad or cooking 0.13 x tsp (4.5g)
  • 59.5 g Fish, salmon, chinook, smoked 0.44 x cup, cooked (136g)
  • 5.3 g Creme Fraiche 0.38 x 1 tbsp (14g)
  • 34 g country-style bread, toasted or .. 1 x 1 slice (34g)
  • 2.2 g Capers, canned 0.25 x tbsp, drained (8.6g)
  • 20.6 g champagne vinegar 1.38 x 1 tbsp (15g)

Instructions

  • Into a small bowl, combine vinegar and onion. Keep it aside for at least an hour to pickle.
  • Heat a little oil in a skillet over medium-heat. Fry capers until they are crisp and have opened slightly. Drain excess oil from capers using paper towels.
  • Spread the toasts with crème Fraiche and season them with salt and pepper.
  • Provide toppings for each toast with smoked salmon, fried capers, drained pickled red onion and chives. Add a little oil over it.
  • Serve immediately.
