  • 67 g Asparagus, raw 0.5 x cup (134g)
  • 75.7 g Couscous, dry 0.44 x cup (173g)
  • 50 g Bell pepper (green/yellow/red) 0.5 x unit (100g)
  • 84 g Mangos, raw 0.25 x fruit without refuse (336g)
  • 62.5 g Smoked chicken breast 0.63 x unit (100g)
  • 12.5 g Mint Leaves, green, raw 1.25 x 4-5 leaves (10g)
  • 18.5 g Peppers, sweet, green, raw 0.25 x small (74g)
  • 33.5 g Limes, raw 0.5 x fruit (2" dia) (67g)
  • 9.8 g Oil, olive, salad or cooking 0.75 x tablespoon (13g)
  • 0 g Salt, table 0.25 x dash (0g)

Instructions

  • Clean the asparagus and cook them for 2 minutes in boiling water with some salt. Rinse with cold water when done.
  • Prepare couscous according to instructions on package with some salt
  • Clean bell pepper and cut in rings
  • Clean mango, green pepper + mint and dice
  • Dice smoked chicken
  • Mix couscous, bell pepper, mango, chicken, green pepper and mint with the lemon juice and olive oil
  • Add some pepper and salt to taste.
