Sautéed Snapper with Plum Tomatoes and Spinach

Ingredients for serving

  • 2.5 g Minced garlic 0.5 x 1 tsp (5g)
  • 3.3 g Oil, olive, salad or cooking 0.25 x tablespoon (13g)
  • 22.5 g Baby Spinach 0.75 x cup (30g)
  • 7.5 g Sparkling white wine 0.06 x glass (120g)
  • 0 g Salt, table 0.25 x dash (0g)
  • 0 g Spices, pepper, black 0.25 x dash (0g)
  • 85 g Fish, snapper, mixed species, .. 1 x oz (85g)
  • 93 g Tomatoes, red, ripe, raw, year .. 1.5 x plum tomato (62g)

Instructions

  • Heat 1 ½ tsp oil in a pan over medium heat.
  • Sprinkle fish with salt and pepper. Place the fish in the pan and cook for a couple of minutes on both sides and then remove it.
  • Add 1 ½ tsp olive oil in a pan over medium heat. Add garlic and tomato and saute for a minute. Add wine and simmer for 2 minutes. Then add spinach and cook until it wilts.
  • Add fish back into pan. Spoon tomato mixture over fish and cook for a couple of minutes.
  • Serve hot.
