Instructions
Cook Quinoa and chickpeas in water until soft and fluffy.
Cut the tofu in ½ inch thick, big triangles. Season the tofu with vinegar, oil, basil, garlic, salt and pepper. Let it soak in this marinade for 30 minutes.
Preheat the grill to medium high and grill the tofu for 5 minutes each side, until brown.
Meanwhile prepare the salad, add chopped greens, cooked quinoa, chickpeas, pine nuts, tomatoes, lemon juice, salt and pepper together. Toss the salad ingredients to combine flavors.
Serve the salad topped with grilled tofu slices.
