Protein Packed Salad With Garlicky Balsamic Tofu

Ingredients for serving

  • 84 g HOUSE FOODS Premium Firm Tofu 1 x oz (84g)
  • 16 g Vinegar, balsamic 1 x tbsp (16g)
  • 3.1 g Spices, garlic powder 1 x tsp (3.1g)
  • 92.5 g Quinoa, cooked 0.5 x cup (185g)
  • 76 g Chickpeas (garbanzo beans, .. 0.5 x cup drained, rinsed (152g)
  • 50 g Mixed Salad Greens 1 x cup (50g)
  • 123 g Tomatoes, red, ripe, raw, year .. 1 x medium whole (2-3/5" dia) (123g)
  • 2.1 g Spices, basil, dried 1 x tbsp, leaves (2.1g)
  • 6 g Salt, table 1 x tsp (6g)
  • 6.4 g Spices, pepper, black 1 x tbsp (6.4g)
  • 5.9 g Lemon juice, raw 1 x wedge yields (5.9g)
  • 1 g Oil, olive, salad or cooking
  • 1.7 g Nuts, pine nuts, dried 1 x nuts (1.7g)

Instructions

  • Cook Quinoa and chickpeas in water until soft and fluffy.
  • Cut the tofu in ½ inch thick, big triangles. Season the tofu with vinegar, oil, basil, garlic, salt and pepper. Let it soak in this marinade for 30 minutes.
  • Preheat the grill to medium high and grill the tofu for 5 minutes each side, until brown.
  • Meanwhile prepare the salad, add chopped greens, cooked quinoa, chickpeas, pine nuts, tomatoes, lemon juice, salt and pepper together. Toss the salad ingredients to combine flavors.
  • Serve the salad topped with grilled tofu slices.
