Ingredients for serving

  • 0.1 g Oil, PAM cooking spray, original 0.25 x spray , about 1/3 second (1 NLEA serving) (0.3g)
  • 56 g Water 0.25 x 1 cup (224g)
  • 106.3 g Pork loin, Tenderloin, trimmed, .. 1.25 x loin, whole (85g)
  • 101 g Tomatoes, red, ripe, cooked, .. 1 x cup (101g)
  • 103.1 g Hominy, canned, white 0.63 x cup (165g)
  • 0.7 g Southwest Chipotle Salt-Free .. 0.25 x 1 tsp (2.8g)
  • 0.3 g Coriander (cilantro) leaves, raw 0.06 x cup (4g)

Instructions

  • Heat a saucepan on a medium heat. Lightly coat it with cooking spray.
  • Spread pork pieces evenly on the pan. Add chipotle seasoning blend. Coat all the ingredients evenly with cooking spray.
  • Cook pork until it becomes brown.
  • Stir in tomatoes, water and hominy. Bring the mixture to boil.
  • Reduce the heat and simmer for at least 20 minutes.
  • Add cilantro and serve immediately.
