Instructions
Prepare the grill to medium heat.
In a medium bowl, mix lemon juice, lemon rind, sugar, peanut butter, fish sauce, salt, curry powder, coriander and garlic cloves. Stir the ingredients until you get a smooth mixture.
Now add pork to the mixture and toss for uniform coating. Keep it aside for a few minutes.
To prepare sauce, take another bowl and mix 1 ½ tbsp sugar, rice vinegar, cilantro, lime juice, Mirin sauce fish sauce, and Serrano pepper. Now add roasted peanuts and stir well.
Take skewers and thread pork pieces uniformly. Then place the skewers on the heated grill that is lightly coated with cooking spray. Grill both the sides for a few minutes. Serve hot with sauce.
