Pineapple And Tofu Fried Brown Rice

Ingredients for serving

  • 165 g Pineapple, raw, traditional .. 1 x cup, chunks (165g)
  • 158 g Vitasoy USA Azumaya, Extra Firm .. 2 x package (79g)
  • 160 g cooked brown rice 1 x cup (160g)
  • 80 g Bell pepper (green/yellow/red) 1 x medium (80g)
  • 80 g Peas, green, frozen, cooked, .. 1 x cup (80g)
  • 122 g Carrots, raw 1 x cup strips or slices (122g)
  • 10 g Onions, raw 1 x tbsp chopped (10g)
  • 182 g Tomatoes, red, ripe, raw, year .. 1 x large whole (3" dia) (182g)
  • 6.3 g Spices, curry powder 1 x tbsp (6.3g)
  • 5.2 g Spices, ginger, ground 1 x tbsp (5.2g)
  • 2.7 g Spices, chili powder 1 x tsp (2.7g)
  • 0.4 g Salt, table 1 x dash (0.4g)
  • 4.5 g Oil, olive, salad or cooking 1 x tsp (4.5g)
  • 4 g Coriander (cilantro) leaves, raw 1 x cup (4g)

Instructions

  • Wash and cook the brown rice according to the package instructions. Set aside to cool a bit.
  • Cut the tofu in cubes.
  • Heat the oil in a nonstick skillet and sauté tofu until golden brown. Remove the tofu from the skillet.
  • Cook the onions in the same skillet until translucent. Add vegetables, tomatoes, ginger paste, curry powder, red chili powder and salt. Cook for 2-3 minutes.
  • Add cooked rice, tofu and chopped pineapple stir and cook for 1 minutes.
  • Add cilantro and mix all the ingredients.
  • Serve hot.
