Instructions
Wash and cook the brown rice according to the package instructions. Set aside to cool a bit.
Cut the tofu in cubes.
Heat the oil in a nonstick skillet and sauté tofu until golden brown. Remove the tofu from the skillet.
Cook the onions in the same skillet until translucent. Add vegetables, tomatoes, ginger paste, curry powder, red chili powder and salt. Cook for 2-3 minutes.
Add cooked rice, tofu and chopped pineapple stir and cook for 1 minutes.
Add cilantro and mix all the ingredients.
Serve hot.
