Instructions

Cook quinoa as per the package instruction.

Season chicken with salt and pepper.

Heat olive oil in a wok, add onion sauté for 2 minutes, add chicken and cook for 10 minutes on low heat.

When the chicken is tender remove from the heat.

Allow chicken to cool, and shred it for bite size pieces.

Combine cooked quinoa into the chicken, add corn, jalapeno and parsley mix well.

Adjust the seasoning by adding salt and pepper according to your taste.

Cook for 2-3 minutes while stirring continuously. Serve hot.
