Ground Beef Stuffed Tortillas

Ingredients for serving

  • 85 g Beef, ground, 95% lean meat / 5%.. 1 x serving (3 oz) (85g)
  • 62 g La Tortilla Factory Low Carb .. 1 x 1 Large Tortilla (62g)
  • 44 g Egg, whole, raw, fresh 1 x medium (44g)
  • 80 g Bell pepper (green/yellow/red) 1 x medium (80g)
  • 10 g Onions, raw 1 x tbsp chopped (10g)
  • 5 g Cheese, parmesan, dry grated, .. 1 x tbsp (5g)
  • 3.2 g Olives, ripe, canned .. 1 x small (3.2g)
  • 2.3 g Spices, paprika 1 x tsp (2.3g)
  • 0.4 g Salt, table 1 x dash (0.4g)
  • 2.3 g Spices, pepper, black 1 x tsp, ground (2.3g)
  • 15 g Ground cumin 1 x tbsp (15g)
  • 1 g Oil, olive, salad or cooking

Instructions

  • Chop garlic, onion, olives, and green bell pepper into small pieces.
  • Heat oil in a non - stick pan, and sauté onions.
  • When the onion becomes translucent, add the ground beef, season with cumin, paprika, and salt & pepper. Cook until brown.
  • Separate the egg yolk from the white; add egg white and cheese into beef stuffing (This will help the stuffing stick when placed into the tortilla). Whisk the egg yolk in a small bowl, set aside for later use.
  • Let the beef stuffing- mixture cool and meanwhile preheat the oven to 350 degrees Fahrenheit.
  • Place the tortilla on the kitchen surface and stuff them with beef mixture, brush egg yolk around the edges and fold them in half moon shape.
  • Press the edges to seal the tortillas and coat with egg yolk from the top.
  • Once the tortillas are ready place them on a baking sheet and bake for 20 minutes or until crisp.
  • Remove from the oven and serve with tomato sauce.
