Instructions
Preheat the grill to high heat.
Place the sardines on a baking sheet and drizzle with a little olive oil.
Grill 3-4 minutes per side until the skin begins to brown. Remove from the grill and sprinkle little salt and pepper.
Meanwhile prepare the salsa, finely chop the onion, parsley and mint leaves. Add remaining oil, salt and pepper. Mix all the ingredients and let it set for 5-10 minutes to develop the taste.
Serve the salsa over the grilled fish.
