Grilled Sardine With Fresh Salsa

Ingredients for serving

  • 89 g Fish, sardine, Pacific, canned .. 1 x cup (3.1 oz)
  • 160 g Onions, raw 1 x cup, chopped (5.6 oz)
  • 60 g Parsley, fresh 1 x cup chopped (2.1 oz)
  • 30.5 g Lemon juice, raw 1 x fl oz (1.1 oz)
  • 10 g Mint Leaves, green, raw 1 x 4-5 leaves (0.4 oz)
  • 4.5 g Oil, olive, salad or cooking 1 x tsp (0.2 oz)
  • 0.4 g Salt, table 1 x dash (0 oz)
  • 6.9 g Spices, pepper, black 1 x tbsp, ground (0.2 oz)

Instructions

  • Preheat the grill to high heat.
  • Place the sardines on a baking sheet and drizzle with a little olive oil.
  • Grill 3-4 minutes per side until the skin begins to brown. Remove from the grill and sprinkle little salt and pepper.
  • Meanwhile prepare the salsa, finely chop the onion, parsley and mint leaves. Add remaining oil, salt and pepper. Mix all the ingredients and let it set for 5-10 minutes to develop the taste.
  • Serve the salsa over the grilled fish.
