Feta, Green Onion, and Asparagus Frittata

Ingredients for serving

  • 18.2 g 1% low fat milk 0.08 x cup (242g)
  • 16.5 g Egg, white, raw, fresh 0.5 x large (33g)
  • 14 g Cheese, feta 0.5 x oz (28g)
  • 0 g Salt, table 0.25 x dash (0g)
  • 0 g Spices, pepper, black 0.25 x dash (0g)
  • 48 g Asparagus, raw 2 x spear, extra large (8-3/4" to 10" long) (24g)
  • 75 g Egg, whole, raw, fresh 1.5 x large (50g)
  • 11.3 g Chopped Green Onions 0.08 x 1 cup (150g)
  • 5 g Shallots, raw 0.5 x tbsp chopped (10g)

Instructions

  • In a bowl, combine milk, eggs, egg whites, salt and pepper.
  • Place a large pan (about 9”) over medium heat.
  • Arrange asparagus, green onions and shallots in layers in the pan. Sprinkle cheese over the layers.
  • Pour the egg mixture carefully over the cheese and allow cooking until the eggs are partially set.
  • Turn the frittata and continue to heat until it browns lightly. Remove from the pan and serve hot.
