Bulgur Salad (Turkish: Kisir)

Ingredients for serving

  • 46.7 g Bulgur, dry 0.33 x cup (140g)
  • 3.3 g Tomato products, canned, puree, ..
  • 3.3 g Bell pepper, puree 0.33 x Tablespoon (10g)
  • 82 g Tomatoes, red, ripe, raw, year .. 0.67 x medium whole (2-3/5" dia) (123g)
  • 119 g Peppers, sweet, green, raw 1 x medium (approx 2-3/4" long, 2-1/2" dia) (119g)
  • 200.7 g Cucumber, with peel, raw 0.67 x cucumber (8-1/4") (301g)
  • 20 g Onions, spring or scallions .. 1.33 x medium (4-1/8" long) (15g)
  • 6.7 g Parsley, fresh
  • 0.3 g Spearmint, dried 0.33 x tbsp (1.6g)
  • 2 g Spices, pepper, black 0.33 x tbsp (6.4g)
  • 1.7 g Spices, pepper, red or cayenne 0.33 x tbsp (5.3g)
  • 16 g Lemon juice, raw 0.33 x lemon yields (48g)
  • 6.7 g Oil, olive, salad or cooking 0.5 x tablespoon (13.5g)
  • 0 g Salt, table 0.33 x dash (0.4g)

Instructions

  • Add a cup of boiling water to the Bulgur. Close the top and wait until the bulgur swallows all the water.
  • In the meantime, chop the tomatoes, onions, green peppers, cucumber & fresh parsley.
  • If the bulgur is ready (after approx. 10-15 minutes), add the tomato and bell pepper puree to the bulgur
  • Knead the bulgur-puree mix.
  • Add the vegetables, oil, lemon and spices (according to taste)
  • Knead until everything is mixed nicely.
