Ingredients for serving

  • 37.5 g Corn, sweet, yellow, canned, .. 0.25 x cup drained, rinsed (150g)
  • 32 g Carrots, raw 0.25 x cup chopped (128g)
  • 2.5 g Onions, raw 0.25 x tbsp chopped (10g)
  • 17.5 g Mushrooms, white, raw 0.25 x cup, pieces or slices (70g)
  • 6.3 g Onions, spring or scallions .. 0.25 x large (25g)
  • 2.3 g Garlic, raw 0.25 x cloves (9g)
  • 45.5 g Tomatoes, red, ripe, raw, year .. 0.25 x large whole (3" dia) (182g)
  • 0 g Salt, table 0.25 x dash (0.4g)
  • 1.5 g Spices, pepper, black 0.25 x tbsp (6.4g)

Instructions

  • In a deep pan, saute chopped onions with olive oil.
  • Add cubed beef and saute over medium heat until brown.
  • Add water, chopped potatoes, tomatoes and corn, cook for 5 minutes.
  • Then add chopped carrot and mushrooms, cook for 5 more minutes.
  • Add minced garlic, chopped spring onions, salt and black pepper, stir and cook for 2-3 minutes.
  • Serve hot with brown rice to add some complex carbs in diet.
