Baked Shrimp Santorini

Ingredients for serving

  • 84 g Shrimp, peeled and deveined 1 x cup (84g)
  • 93 g Quinoa, cooked 0.5 x cup (185g)
  • 28 g Cheese, feta 1 x oz (28.35g)
  • 25 g Onions, spring or scallions .. 1 x large (25g)
  • 7 g chopped Garlic 1 x tbsp (7.15g)
  • 121 g Tomatoes, crushed, canned 1 x cup (121g)
  • 1 g Oil, olive, salad or cooking
  • 3 g Spices, dill weed, dried 1 x tbsp (3.1g)
  • 8 g Dill weed, fresh 1 x cup sprigs (8.9g)
  • 0 g Salt, table 1 x dash (0.4g)
  • 6 g Spices, pepper, black 1 x tbsp, ground (6.9g)
  • 4 g Alcoholic beverage, wine, .. 1 x tsp (4.9g)

Instructions

  • Preheat the oven to 350 degree Fahrenheit. And prepare a baking dish.
  • Clean and wash the shrimps and pat dry with kitchen towel.
  • In a non stick pan sauté onion and garlic with little oil until translucent.
  • Add tomatoes, wine, salt, dill weed fresh and pepper, cover and cook the sauce until thick.
  • When the sauce is thick remove from the heat.
  • In the baking dish place a layer of cooked quinoa, then arrange shrimps on it and pour the tomato sauce over the shrimps.
  • Sprinkle crumble feta cheese on top and dust with some dill weed (dried).
  • Bake in the oven for 25 minutes or until the shrimps are cooked. Serve hot.
