Savory Prawn Noodles Soup

Ingredients for serving

  • 100 g Prawns, raw, uncooked cleaned .. 1 x pack(100), 12 prawns (3.5 oz)
  • 70 g Mushrooms, white, raw 1 x cup, pieces or slices (2.5 oz)
  • 240 g Soup, stock, chicken, .. 1 x cup (8.4 oz)
  • 28.4 g Whole wheat egg noodles 1 x ounce (oz)
  • 7 g chopped Garlic 1 x tbsp (0.2 oz)
  • 10 g Shallots, raw 1 x tbsp chopped (0.4 oz)
  • 5 g Spices, ginger, ground 1 x tbsp (0.2 oz)
  • 28.4 g Peppers, hot chili, red, raw 1 x ounce (oz)
  • 18 g Sauce, fish, ready-to-serve 1 x tbsp (0.6 oz)
  • 16 g Vinegar, balsamic 1 x tbsp (0.6 oz)
  • 20 g Coriander (cilantro) leaves, raw 1 x sprigs (0.7 oz)
  • 0 g Salt, table 1 x dash (0 oz)
  • 4 g Oil, olive, salad or cooking 1 x tsp (0.1 oz)

Instructions

  • Cook the noodles according to the package instructions. Drain and set aside.
  • Meanwhile heat the oil in a saucepan. Add garlic, shallots, ginger and chili. Cook for 1 minute.
  • Pour in the chicken stock and simmer for 5 minutes.
  • Add the prawns, fish sauce, vinegar and mushrooms. Let it simmer for 5 more minutes.
  • Add cooked noodles, salt and cilantro. Stir well and remove from the heat.
  • Serve hot.
