Instructions

Cook brown rice according to directions.

Heat a large pan over medium heat. Add oil and swirl the pan to coat uniformly. Add sausage and pepper and cook for at least 4 minutes.

Add garlic and continue to cook for a few seconds. Now add spinach and continue to cook spinach until it begins to wilt.

Add brown rice and cook for one more minute. Sprinkle with cheese and serve hot.
