Instructions
Coat a medium-sized skillet with cooking spray and place over medium heat. Place chicken on the skillet and cook for 3 – 5 minutes per side, or until cooked through. Remove from heat and set aside.
Spread the sour cream on one tortilla. Slice the chicken breast and spread on top. Cover with salsa and lettuce.
Sprinkle the cheddar cheese on top and cover with the other tortilla.
Coat a large pan with cooking spray and cook the quesadilla on low heat for about 3 minutes on each side. Turn carefully with a large spatula.
