Chunky Chicken Quesadillas

Ingredients for serving

  • 59 g Chicken, broilers or fryers, .. 0.5 x breast bone and skin r (4.2 oz)
  • 6 g Sour cream, reduced fat 0.5 x tablespoon (0.4 oz)
  • 42 g Whole wheat tortillas 1 x piece (1.5 oz)
  • 38.9 g Sauce, salsa, ready-to-serve 0.15 x cup (9.1 oz)
  • 36 g Lettuce, iceberg (includes .. 0.5 x cup shredded (2.5 oz)
  • 17 g Cheese, low fat, cheddar or .. 0.15 x cup, shredded (4 oz)

Instructions

  • Coat a medium-sized skillet with cooking spray and place over medium heat. Place chicken on the skillet and cook for 3 – 5 minutes per side, or until cooked through. Remove from heat and set aside.
  • Spread the sour cream on one tortilla. Slice the chicken breast and spread on top. Cover with salsa and lettuce.
  • Sprinkle the cheddar cheese on top and cover with the other tortilla.
  • Coat a large pan with cooking spray and cook the quesadilla on low heat for about 3 minutes on each side. Turn carefully with a large spatula.
