Turkey Sausage And Barley Hash

Ingredients for serving

  • 57 g Turkey sausage, fresh, cooked 1 x serving (57g)
  • 157 g Barley, pearled, cooked 1 x cup (157g)
  • 88 g Egg, whole, raw, fresh 2 x medium (44g)
  • 10 g Parsley, fresh 1 x sprigs (10g)
  • 0 g Salt, table 1 x dash (0.4g)
  • 2 g Spices, pepper, black 1 x tsp, ground (2.3g)
  • 57 g Cheese, cottage, nonfat, .. 0.5 x oz (113g)
  • 10 g Onions, raw 1 x tbsp chopped (10g)
  • 1 g Oil, olive, salad or cooking

Instructions

  • Take a non stick pan and saute onions with little oil.
  • Cut the sausages in small pieces and add to the onions.
  • When the sausages are brown add cooked barley, cottage cheese and parsley. Mix well and cook until dry.
  • Prepare a baking dish for the hash, by greasing it with non stick oil.
  • Transfer the mixture to the baking dish and set at the bottom by pressing gently.
  • Crack the eggs on the top of the barley mixture and bake in the oven for 10-15 minutes at 375 degree F or until eggs are set.
  • Remove from the oven and sprinkle salt and pepper on the baked eggs.
  • Serve barley hash immediately.
