Instructions

Take a non stick pan and saute onions with little oil.

Cut the sausages in small pieces and add to the onions.

When the sausages are brown add cooked barley, cottage cheese and parsley. Mix well and cook until dry.

Prepare a baking dish for the hash, by greasing it with non stick oil.

Transfer the mixture to the baking dish and set at the bottom by pressing gently.

Crack the eggs on the top of the barley mixture and bake in the oven for 10-15 minutes at 375 degree F or until eggs are set.

Remove from the oven and sprinkle salt and pepper on the baked eggs.

Serve barley hash immediately.
