Ingredients for serving

  • 10.6 g Tomato products, canned, paste, .. 0.06 x can (6 oz) (170g)
  • 92.3 g Tomatoes, red, ripe, raw, year .. 0.75 x medium whole (2-3/5" dia) (123g)
  • 138.8 g Rice, brown, long-grain, raw 0.75 x cup (185g)
  • 20 g Onions, raw 0.13 x cup, chopped (160g)
  • 0.8 g Garlic, raw 0.25 x clove (3g)
  • 65 g Bush's Best, Black Beans 0.5 x 1/2 cup (130g)
  • 30 g Bell pepper (green/yellow/red) 0.38 x medium (80g)
  • 0.1 g Salt, table 0.25 x dash (0.4g)
  • 0.1 g Spices, pepper, black 0.5 x dash (0.1g)
  • 1.7 g Oil, olive, salad or cooking 0.13 x tablespoon (13.5g)

Instructions

  • Cook rice according to package
  • Chop the onions, garlic and dice tomatoes and bell pepper
  • Heat up olive oil in a large skillet, and add onions and garlic
  • Cook until onion is translucent, then crumble tofu and add.
  • After a couple of minutes add cubed tomatoes and bell pepper
  • Let simmer for 5 minutes, then add black beans
  • Let simmer for 10 more minutes and spice up with pepper and salt
  • Mix with rice and serve.
