Sweet Potato Hash Browns With Fried Eggs

Ingredients for serving

  • 100 g Sweet potato, raw 1 x small, large, medium (100g)
  • 44 g Egg, whole, raw, fresh 1 x medium (44g)
  • 2.4 g Spices, onion powder 1 x tsp (2.4g)
  • 3.1 g Spices, garlic powder 1 x tsp (3.1g)
  • 4.5 g Oil, olive, salad or cooking 1 x tsp (4.5g)
  • 0.4 g Salt, table 1 x dash (0.4g)
  • 6.4 g Spices, pepper, black 1 x tbsp (6.4g)
  • 1 g Spices, oregano, dried 1 x tsp, leaves (1g)
  • 1 g Spices, thyme, dried 1 x tsp, leaves (1g)
  • 2.7 g Spices, chili powder 1 x tsp (2.7g)
  • 10 g Bread crumbs, dry, grated, plain

Instructions

  • Peel and grate the sweet potato to make the hash brown.
  • Take a bowl and combine grated sweet potato, herbs, red chili powder, bread crumbs, garlic, onion powder, salt and pepper.
  • Mix well and prepare big flat patties by using this mixture.
  • Heat oil to a non stick pan over medium heat and cook these sweet potato patties for about 3-4 minutes per side or golden brown.
  • Remove the patties to a plate and set aside.
  • Crack the eggs in the same pan and cook until white is set but the yolk is runny.
  • Serve the half fried eggs over sweet potato hash brown and sprinkle salt and pepper on the top.
