Instructions

Peel and grate the sweet potato to make the hash brown.

Take a bowl and combine grated sweet potato, herbs, red chili powder, bread crumbs, garlic, onion powder, salt and pepper.

Mix well and prepare big flat patties by using this mixture.

Heat oil to a non stick pan over medium heat and cook these sweet potato patties for about 3-4 minutes per side or golden brown.

Remove the patties to a plate and set aside.

Crack the eggs in the same pan and cook until white is set but the yolk is runny.

Serve the half fried eggs over sweet potato hash brown and sprinkle salt and pepper on the top.
