Ingredients for serving

  • 85.2 g Spinach, raw 3 x ounce (oz)
  • 3.3 g Oil, olive, salad or cooking 0.25 x tablespoon (0.5 oz)
  • 27.5 g Onions, raw 0.25 x medium (2-1/2" dia) (3.9 oz)
  • 1.5 g Garlic, raw 0.5 x clove (0.1 oz)
  • 25 g Egg, whole, raw, fresh 0.5 x large (1.8 oz)
  • 63.9 g 100% liquid egg whites 2.25 x ounce (oz)
  • 7.1 g All-Purpose Flour 0.25 x ounce (oz)
  • 56.5 g Cheese, cottage, lowfat, 1% .. 0.25 x cup (8 oz)
  • 14 g Land O'Lakes Premium Deli Cheese.. 0.5 x serving (1 oz)
  • 15.5 g Water Chestnuts 0.25 x 1/2 cup (2.2 oz)
  • 0.2 g Spices, nutmeg, ground 0.08 x tsp (0.1 oz)
  • 0.1 g Spices, pepper, red or cayenne 0.13 x tsp (0 oz)

Instructions

  • Preheat oven to 350 F
  • Heat oil in skillet over med. heat. Add onion and garlic and cook until translucent. Add spinach and stir until moisture has evaporated (~3 min). Remove from heat and add water chestnuts.
  • Whisk together egg whites, eggs, cottage cheese, nutmeg, salt and pepper, and a pinch of cayenne
  • Pour egg mixture over vegetables
  • Add tomato slices to top and back for 30 - 40 minutes.
