Instructions
Preheat oven to 350 F
Heat oil in skillet over med. heat. Add onion and garlic and cook until translucent. Add spinach and stir until moisture has evaporated (~3 min). Remove from heat and add water chestnuts.
Whisk together egg whites, eggs, cottage cheese, nutmeg, salt and pepper, and a pinch of cayenne
Pour egg mixture over vegetables
Add tomato slices to top and back for 30 - 40 minutes.
