Instructions
Heat a non-stick grill pan over medium heat and rub chicken breast with salt, pepper and mustard sauce.
Spray some oil in the grill pan and cook the chicken breast until golden brown. It may take 5 minutes per side. Remove to a plate and shred with a fork or knife.
Meanwhile prepare the vegetables; finely chop the carrot, broccoli and basil. Add shredded chicken to the vegetables along with the juices and toss well.
Place the chicken salad on the whole wheat bread and serve along with fresh fruit salsa.
