Open Chicken Sandwich With Fruit Salsa

Ingredients for serving

  • 100 g Chicken breast, low fat 1 x fillet (3.5 oz)
  • 22 g Broccoli, raw 0.5 x cup, chopped or diced (1.5 oz)
  • 5 g Mustard, prepared, yellow 1 x tsp or 1 packet (0.2 oz)
  • 0.4 g Salt, table 1 x dash (0 oz)
  • 2.5 g Basil, fresh 1 x leaves (0.1 oz)
  • 28.4 g Toasted whole grain bread 1 x ounce (oz)
  • 4.5 g Oil, olive, salad or cooking 1 x tsp (0.2 oz)
  • 3 g Carrots, raw 1 x slice (0.1 oz)

Instructions

  • Heat a non-stick grill pan over medium heat and rub chicken breast with salt, pepper and mustard sauce.
  • Spray some oil in the grill pan and cook the chicken breast until golden brown. It may take 5 minutes per side. Remove to a plate and shred with a fork or knife.
  • Meanwhile prepare the vegetables; finely chop the carrot, broccoli and basil. Add shredded chicken to the vegetables along with the juices and toss well.
  • Place the chicken salad on the whole wheat bread and serve along with fresh fruit salsa.
