Instructions
Bring water to a boil, add oatmeal. Stir and reduce heat to a simmer. Cook for 15 minutes while stirring occasionally until oats are soft and tender.
Meanwhile heat the oil in a saucepan. Add onion and garlic and cook for 3-4 minutes. Add mushrooms and thyme sprigs cook until mushrooms turn golden brown.
Add salt and pepper to the mushroom and cook until tender.
Add cooked oatmeal and mix well with the mushrooms.
Transfer to a serving bowl and garnish with fresh thyme leaves.
