High Protein Sweet Potato Pancakes

Ingredients for serving

  • 100 g Sweet potato, raw 1 x small, large, medium (100g)
  • 55.5 g Oat Bran 0.5 x cup (111g)
  • 55 g Egg white beaten 1 x piece (55g)
  • 7.8 g Spices, cinnamon, ground 1 x tbsp (7.8g)
  • 2.2 g Spices, nutmeg, ground 1 x tsp (2.2g)
  • 2.5 g Leavening agents, baking powder,.. 1 x tsp (2.5g)
  • 1.8 g Spices, ginger, ground 1 x tsp (1.8g)
  • 1 g Sweeteners, tabletop, sucralose,.. 1 x serving 1 packet (1g)
  • 1 g Oil, olive, salad or cooking
  • 15 g Milk, reduced fat, fluid, 2% ..
  • 21 g Vanilla Protein Powder 1 x scoop (21g)

Instructions

  • Boil sweet potatoes in water until soft and tender.
  • Drain, peel and mash with fork, add egg whites and whisk together.
  • Combine oat bran, whey, splenda, ginger, nutmeg and baking powder in a bowl and mix together.
  • Add dry ingredients to the sweet potato mixture and mix
  • Prepare a thick pancake batter by using enough milk .
  • Heat a non stick pan over medium heat and spray oil.
  • Pour 1 cup of batter into the pan and cook until golden brown from both sides, for about 3-4 minutes per side.
  • Transfer to a serving plate and sprinkle cinnamon powder on the top, serve hot.
