High Protein Quinoa Breakfast Pudding

Ingredients for serving

  • 85 g Quinoa, uncooked 0.5 x cup (170g)
  • 246 g Milk, reduced fat, fluid, 2% .. 1 x cup (246g)
  • 1 g Stevia, SweetLeaf Stevia .. 1 x 1 packet (1g)
  • 2.2 g Spices, nutmeg, ground 1 x tsp (2.2g)
  • 2.6 g Spices, cinnamon, ground 1 x tsp (2.6g)
  • 46 g Eggwhites 1 x 3 tbsp (46g)
  • 112 g Water 0.5 x 1 cup (224g)
  • 27 g Strawberries, raw 1 x extra large (1-5/8" dia) (27g)

Instructions

  • Cook the quinoa with water and milk, bring to a boil.
  • Add cinnamon stick and nutmeg then reduce the heat to low.
  • Let it simmer for 20 -30 minutes while stirring occasionally until quinoa is soft.
  • When the quinoa is cooked, add whisked egg white to the mixture while stirring continuously.
  • Cook until the mixture has thickened.
  • Remove from the heat.
  • Serve at room temperature and add nuts and fruits before serving.
