Instructions

In a large pot, mix ham, eggs, salt, pepper, egg whites and cheese.

Heat a large pan coated with cooking spray over medium heat. Add onion, asparagus and bell pepper and saute for a few minutes.

Add egg mixture. Reduce the heat to medium. Cover the mixture and continue to cook for a few more minutes.

Sprinkle the mixture with a little Italian seasoning. Heat the mixture until the egg is set. Cut into 4 wedges and serve hot.
