Instructions

Preheat the oven to 350 degree F.

In an oven proof skillet heat little olive oil and sauté chopped garlic for 1-2 minutes, add leek slices and cook while stirring for 3-4 minutes or until soft.

Add chopped green vegetables, Italian spices and cook over medium heat until wilted.

Evenly spread all the vegetables in the skillet and crack the eggs side by side on the vegetables. Cook the vegetables on the stove for 2 minutes.

Now transfer the skillet to the oven and bake until eggs are set and firm for almost 4-5 minutes.

Remove from the oven and sprinkle salt and pepper according to your taste.

Serve with multigrain bread.
