Crostini With Pesto Scrambled Eggs

Ingredients for serving

  • 88 g Egg, whole, raw, fresh 2 x medium (44g)
  • 10 g Pesto, red or green
  • 28.4 g Cheese, low fat, cheddar or .. 1 x oz (28.35g)
  • 4.5 g Oil, olive, salad or cooking 1 x tsp (4.5g)
  • 0.4 g Salt, table 1 x dash (0.4g)
  • 56.8 g Bread, rye, toasted 2 x oz (28.35g)

Instructions

  • Whisk together eggs, cheese, pesto, salt and pepper in a medium sized bowl.
  • Heat the oil in a non-stick pan over medium heat. Pour in the egg mixture and scramble with a spoon.
  • Cook while stirring for 2-3 minutes. Transfer to a plate.
  • Toss 2 slices of crostini in the same pan for 30 seconds each side.
  • To serve, place crostini on the plate and top with scrambled eggs.
