Instructions

Whisk together eggs, cheese, pesto, salt and pepper in a medium sized bowl.

Heat the oil in a non-stick pan over medium heat. Pour in the egg mixture and scramble with a spoon.

Cook while stirring for 2-3 minutes. Transfer to a plate.

Toss 2 slices of crostini in the same pan for 30 seconds each side.

To serve, place crostini on the plate and top with scrambled eggs.
