Broccoli And Potato Breakfast Bake

Ingredients for serving

  • 37.5 g Potatoes, white, flesh and skin,.. 0.5 x cup, diced (2.6 oz)
  • 45.5 g Broccoli, raw 0.5 x cup chopped (3.2 oz)
  • 28 g Egg, whole, raw, fresh 0.5 x extra large (2 oz)
  • 14.2 g Milk, reduced fat, fluid, 2% .. 0.5 x ounce (oz)
  • 14 g Cheese, low fat, cheddar or .. 0.5 x oz (1 oz)
  • 0 g Salt, table 0.5 x dash (0 oz)
  • 3 g Spices, pepper, black 0.5 x tbsp, ground (0.2 oz)
  • 14 g Bread crumbs, dry, grated, plain 0.5 x oz (1 oz)

Instructions

  • Place potatoes in a saucepan, cover with water and bring to a boil.
  • Let it simmer for 10 minutes. Add broccoli and let it cook along with potatoes for 5 minutes. Drain potatoes and broccoli in a colander and set aside.
  • Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius). Spray a baking pan with oil.
  • Spoon potato and broccoli in the baking pan.
  • Whisk together egg, milk, salt and pepper. Pour the egg mixture on the potato and broccoli. Bake for 30 minutes.
  • Remove from the oven sprinkle bread crumbs and cheese. Bake for another 5-6 minutes until cheese melt.
  • Remove from the oven and serve warm.
