Blueberry Protein Pancakes

Ingredients for serving

  • 36.7 g Egg, whole, raw, fresh 0.83 x medium (44g)
  • 11.7 g Coconut flour - Aman Prana
  • 37.3 g Water 0.17 x 1 cup (224g)
  • 0.3 g Leavening agents, baking soda 0.17 x tsp (2.3g)
  • 12.3 g Blueberries, raw 0.08 x cup (148g)
  • 5 g Trutein - CinnaBun 0.17 x scoop (30g)

Instructions

  • In a bowl, whisk the eggs until a bit fluffy.
  • Add in the coconut flour, sifted.
  • Except for the blueberries, mix all ingredients together.
  • Heat some oil or butter in a pan.
  • Scoop some of the batter in the pan, sprinkle a few blueberries on top.
  • Cover the pan with a lid, and let it cook for a few mins.
  • Flip the pancake over and cook until brown.
